Game Day Sliders

Last week I said it felt like fall, but it didn't really, did it? Something was definitely missing.

Ahh, yes. Football!

And football would be missing something without some decadent game food. So for the first Sunday of the season, we decided sliders were in order. These turned out to be a little reminiscent of White Castle burgers, albeit much, much better.

How cute are these tiny little burgers? We made half beef burgers and half pulled buffalo chicken. With plenty of pickles all around.

Any little buns will obviously work, but I stumbled on a gold mine with these Martin's mini potato rolls, one of my favorite forms of bread.

Game Day Sliders
makes 24 itty-bitty (2 inch) sliders

1 lb ground beef
2 eggs
1/2 cup breadcrumbs
2 tsp liquid smoke (optional but yummy)
1 tsp Cajun salt

2 cooked chicken breasts, from a rotisserie chicken (or cooked any way you please, really)
3/4 cup hot or buffalo sauce (like Frank's)
1 Tbsp butter

24 mini buns
Cheddar cheese, pickles, blue cheese dressing, mustard, or your other favorite toppings

To make the burgers, combine beef, eggs, breadcrumbs, liquid smoke, and Cajun salt until just combined. Form into 12 small (~2 inch) patties.

Preheat a grill or cast iron pan on the stove to medium-high heat. Cook burgers 3 minutes per side, or until they reach your desired doneness. (If you want, top with slices of cheddar and cover during the last minute or two of cooking.)

Shred cooked chicken breasts. I find the fastest way to do this is putting the chicken in my stand mixer with the paddle attachment and "mixing" on low speed until it's evenly shredded.

Combine shredded chicken, buffalo sauce, and butter in a saucepan over low heat until warmed through.

Assemble and enjoy!
