Brown Sugar Baked Peaches

Okay, time for a slight break from fall.

Yes, fall, I still love you and want to eat the meal equivalent of you every day by cooking as many squash as I can get my hands on, but sometimes there are some hangers-on from summer that are too delicious to ignore.

PEACHES! Nate brought home a few peaches from the farmer's market last week - a last hurrah to summer. (Then we sang the "millions of peaches" song every moment of every day until they were gone. Thank you, Presidents of the United States.)

So when the last two peaches were looking like they might get ignored, I remembered this inspiration I found via Pinterest over the summer. Half an hour later, we had a melt-in-your-mouth, could-NOT-be-easier, dessert.

Seriously, this is ridiculously simple and delicious. I realize that peaches on their own are pretty good, but why would you not add brown sugar, butter, and cinnamon?

Brown Sugar Baked Peaches

2 fresh peaches
2 tsp. unsalted butter
3 Tbsp. brown sugar
Sprinkling of ground cinnamon and ground nutmeg, to taste

Preheat oven to 375F.

Halve peaches and remove pit. Place in baking dish, skin side down.

Place 1/2 teaspoon butter in the hollow of each peach and top each peach half with 2 teaspoons brown sugar (ish). Sprinkle with cinnamon and nutmeg.

Bake at 375 degrees until peaches are tender, about 30 minutes.

Serve warm. (Perhaps with ice cream?!)
