Sunday Brunch

On Monday I showed off the banner I made for my friend Kim's baby shower brunch, but I didn't share the most important part: the food! I can't take any credit for the actual cooking; I was busy cutting, pasting, and finishing up Kim's present while my lovely roommates whipped up brunch. Here's the menu:



Mini frittatas with parmesan, cheddar, and spinach. My roommate Elise made these and they were the perfect savory addition to brunch. And miniature, which I always appreciate.



Crepes filled with nutella, bananas, and strawberries. What's not to like?



Brunch punch: orange & cranberry juices, peach schnapps, champagne, and a splash of apple cider. (Made virgin for the mom-to-be, obviously). My roommate Kate made this delicious drink, and came up with the idea of using different colored ribbon as wine glass charms to tell our glasses apart.



The spread - including the freshly-picked apples from Russell Orchards and the apple pie Sara (our honorary roommate) made with them.

Okay now I'm salivating... I could really go for a couple of those mini frittatas right now.

  2. Yep mini muffin tins! Word to the wise: we sprayed them first, but the frittatas were still a little tricky to get out when the spinach settled against the pan.

  5. We didn't really use a recipe for the frittatas - just mixed a big bowl of eggs, sauteed spinach, cheese, and a little milk, and then poured it into mini muffin tins and baked it for a few minutes. I think that sums it up.
